Summery Garden Gazpacho

Ingredients

  • 2 ½ pounds garden fresh tomatoes
  • 1 large bell pepper
  • 2-3 medium peppers
  • 1 onion
  • 1 cucumber peeled
  • 2 cloves garlic
  • 2 slices brea or 2 Tablespoons chia seeds for gluten free
  • ¼ good extra virgin olive oil

Instructions

  • Coarsely chop all ingredients and place in a large food processor or blender. Alternately, you can use an immersion blender. Blend until very smooth and velvety, while drizzling with olive oil to emulsify.
