- 2 ½ pounds garden fresh tomatoes
- 1 large bell pepper
- 2-3 medium peppers
- 1 onion
- 1 cucumber peeled
- 2 cloves garlic
- 2 slices brea or 2 Tablespoons chia seeds for gluten free
- ¼ good extra virgin olive oil
Coarsely chop all ingredients and place in a large food processor or blender. Alternately, you can use an immersion blender. Blend until very smooth and velvety, while drizzling with olive oil to emulsify.
