This Summery Garden Gazpacho will leave you feeling downright virtuous. It is that good (and incredibly easy). Summer perfection!

I stand at the intersection of early season and late season garden goods.  The heirloom tomatoes are blushing their vibrant tones daily, while the once prolific cucumbers have dwindled to a few crunchy delights.  Onions have been pulled and left to cure off their stem ends in the still warm sun.  The peppers hang heavy on their stems…  But it seems the minute summer gets really going in Oregon, it grinds to a halt.  The kids go back to school and the sweaters soon come out.  But I am not trading my sandals and sundresses for sweaters and boots just yet.  Nor am I swapping fresh, straight from the garden goodness for comforting stews and soups.

I will not give in.  Not yet.  If the days are still warm, I will celebrate the garden and all her glory.  My war cry to the changing of the season: Summery Garden Gazpacho!

I can think of no better way to pay respectful homage to the garden that with a rich, complex, flavorful gazpacho.  Raw and sweet from the sun ripened produce, this gazpacho positively sings to me.  I feel uplifted and healthy and just good after helping myself to a bowl.  Just jam packed with nutrients it is not hard to understand why I feel so, well, virtuous after consumption.  One cannot say that of many foods – being virtuous that is.

Summery Garden Gazpacho

This Summery Garden Gazpacho is about as easy to create as bread and butter, albeit with more kitchen appliances.  If you have a good food processor/blender with a sharp blade and a copious bowl, you can simply roughly chop all the ingredients and toss into your instrument of emulsion and go…  Now is the perfect time to break out a really rich, peppery olive oil as it will really heighten this dish to something glorious – and virtuous.

I cannot end this post without sharing that my little two year old loves her “spacho”.  While enjoying a bowl recently she cooed with delight, but was suddenly shocked at her own messiness.  She said to me “Mommy, I got “spacho” on me face. Got “spacho” on me handies.  And “spacho” on me shirt!”

So here is to getting some “spacho” on your face…

Summery Garden Gazpacho

Play around with the ingredients, use what is available to you! This recipe is more of a suggestion than a set of instructions. This is great place to highlight a wonderful olive oil though! I like to garnish with feta cheese and green onions or bacon...
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients
  

  • 2 ½ pounds garden fresh tomatoes
  • 1 large bell pepper
  • 2-3 medium peppers
  • 1 onion
  • 1 cucumber peeled
  • 2 cloves garlic
  • 2 slices brea or 2 Tablespoons chia seeds for gluten free
  • ¼ good extra virgin olive oil

Instructions
 

  • Coarsely chop all ingredients and place in a large food processor or blender. Alternately, you can use an immersion blender. Blend until very smooth and velvety, while drizzling with olive oil to emulsify.
